Fresh Strawberry Desserts

Fresh strawberry desserts are available almost all year long!
Our strawberry desserts are festive enough for special holidays and parties, and can be made any time of the year. (And in the off-season, you can use frozen for most of these recipes).

Nutritious! – As you may know, strawberries are very healthy with no sodium, cholesterol or fat. Plus they’re high in vitamins like Vitamin C, and great for fiber and anti-oxidants to support our health.

These fun fresh strawberry desserts are perfect for special occasions and holidays such as Valentine’s Day, the 4th of July, even Christmas (red and green)! And, of course, all spring and summer long. Even during winter you can usually find fresh strawberries in the stores. Making strawberry treats are also delicious senior activity ideas that you can eat!

Fresh Strawberry Desserts

Apple Bowl With Berries

And lots of other goodies too. This is very healthy, especially using natural products.

Try real whipped cream and/or natural ice cream. (We used whipped cream from a can for some of our fresh strawberry desserts, but you can use fresh, home-made). Orstrawberry ice cream. Or both!

You will need:

  • A small plate or shallow bowl
  • Bright red apple, cut in half, core scooped out
  • About 1/4 cup of lemon juice
  • Whipped cream
  • Ice cream (optional)
  • 6 to 8 pieces of cut fresh strawberries
  • 4 to 5 raspberries
  • 3 to 4 blueberries (optional, but fun for July 4th) !
  • Strawberry sauce (see recipe further below)
  • Small sized kabob skewer (“brochette” size)
  • Candy for garnishment

Pour lemon juice into a shallow small bowl, making a large puddle to dip the apple into.

Cut an apple in half and place it face down in the lemon juice right away, to prevent browning. Then take a spoon or knife to core and hollow out a bowl shape in the apple.

Drizzle some strawberry sauce into the hollow. If you are serving your fresh strawberry desserts right away, fill the hollow with a scoop of ice cream. You will want to have your berries all ready (strawberries cut in advance), to quickly prepare this so it does not melt. Otherwise, fill the hollow with whipped cream.

Then arrange the strawberries, raspberries, blueberries, and anything else you’d like to use. Add a little more whipped cream and berries, repeating as many layers as you’d like. Then stick the skewer into the apple, and top it off with a raspberry, blueberry, or other garnishment.

Arrange any candies around the bottom. Chocolate candy is also delicious with strawberries.

Strawberry Chocolate Cup

This item can actually be several projects for fresh strawberry desserts all in one. You have making the chocolate cup if you’d like (very easy, see below), and also the chocolate swirl on top (also easy, see our Food Activities page). And of course making the dessert itself. This could also be a fully no-bake project.

You will need:

  • Chocolate cups; either from store or home-made
  • 4 to 6 strawberries per cup
  • Other berries if desired
  • Strawberry ice cream 
  •  - OR – Whipped cream
  • Strawberry sauce (recipe below) or jam
  • Chocolate swirl for top, or other candy or topping

If you are making your own chocolate cups, which is really fun and quick, see below. When the chocolate is chilled and set, remove from their cups.

Cut several strawberries in small pieces. Place them in the bottom of the cups, along with a few other berries, until the cup is full. If you are using strawberry sauce or jam, drizzle it on at this point. Option: you could also add in a couple spoonfuls of chocolate custard/pudding. Add on a small scoop of strawberry ice cream. Top with a chocolate swirl (see how to make them at link above), or other candy or topper. That’s it!

Chocolate Cups

These delicious cups are fun food activities for seniors and can be used for all sorts of desserts! They have a natural, fanciful free-form look since they’re home made.

You will need:

  • Package of chocolate chips
  • Baking cups
  • Cupcake pan
  • Spray oil 
  • Craft paint brush
  • Spoons, water and paper towels
  • Platter

These are so easy. I just used regular paper baking cups. But if you can, the silicone cups work really well, as the chocolate pops right out.

Microwave the chocolate chips to melt them at short intervals. This avoids over-cooking. First melt for 30 seconds, remove and stir. Then 15 seconds, remove and stir. Do this routine until the chips are melted, with just a few lumps remaining, that will melt on their own as you stir.

Spray the paper baking cups with oil. Spoon melted chocolate onto the bottom of a baking cup and spread it around.

With a moist but not wet brush, brush chocolate up the sides of the cup to thoroughly coat it. Put them all in the fridge to set for 10 minute. (Wash and dry paint brush between applications).

Then brush another coat of chocolate, and into fridge for another 10 to 15 minutes. When they’re set, gently peel off the paper. Or pop them out of the silicone cups. Place them on a platter.

Now they’re ready to fill with your preference of ingredients for fresh strawberry desserts, or whatever else you choose.

Options — Here is another super simply way to use them. Just fill with fruit and whatever else you like, and squirt chocolate tube icing over them. Top with a candy.

Chocolate cups are excellent for any holiday events. You can also get squirt tube icing in a variety of colors to suit your occasion — such as green for Christmas and St. Patrick’s Day; orange for Halloween. Strawberries (including frozen) can be found almost all year long.

All-Natural Strawberry Sauce

I make many berry sauces like this, and this one can be added into many fresh strawberry desserts for a little extra enhancement.

You will need:

  • Sauce pan with cover
  • 1 to 2 cups chopped fresh strawberries
  • 2 to 3 Tablespoons honey or pure maple syrup, to taste
  • About 1 teaspoon water

The amount of ingredients is flexible, depending on how much you’re making, and how sweet you want the sauce. Just place all the ingredients in the sauce pan. Bring to a boil on Medium heat, then turn it to Low and cover the pan.

Let it simmer for about a half hour or so, depending on how much strawberries you used. You want the berries to be soft. If you want the sauce to be thinner, add in a little more water, or even more honey/syrup. Then with a fork, mash the berries. Serve warm, add in to other desserts, or chill the sauce. I like to eat it just plain! It’s also great over ice cream.

Brandy Chocolate Strawberry Tart

I loved the recipe a reader submitted for Brandy Chocolate Custard and decided to use it on our fresh strawberry desserts page. You can also eliminate the brandy and just use vanilla. Or use chocolate ice cream instead of making the custard.

(NOTE: I did use 3 Tablespoons of brandy instead of 2; and 2 Tablespoons of coco powder instead of 1 –  because I like strong flavor).

You will need:

  • Pre-made mini graham cracker crust pie shells
  • 3 to 4 strawberries, cut in pieces
  • Raspberries, blueberries, etc. as desired.
  • Brandy chocolate custard made in advance
  •  - OR just use chocolate ice cream 
  • Whipped cream
  • Chocolate swirl topper, or other candy or topper

Fill the graham tart shells with a spoonful of custard and several pieces of cut strawberries, raspberries, etc. Add another mound or two of custard. Top with a bit of whipped cream, and insert a chocolate swirl (easy on our food activities page). Also shown in the picture, a pink covered strawberry — you can learn to make chocolate covered strawberries in a very simple way. They’re great to use for all kinds of things.

Strawberry Oatmeal Muffins

Fresh strawberry desserts are more naturally sweet when made with exactly that – fresh strawberries. This is a delicious rendition of the Oatmeal and Peach Muffin recipe submitted in our Share Your Healthy Desserts Forum, by Anne of Illinois. She suggested modifying the recipe with fresh strawberries instead of peaches. So I did give it a try, and it’s very good. I used pure maple syrup instead of the honey, since that’s the sweetener I prefer.

You will need:

Have 3/4 cup of fresh chopped strawberries ready first.
Sift the following dry ingredients together:
1 cup of whole wheat pastry flour
1/2 teaspoon of cinnamon
3 1/2 tsp of baking powder
Add in next:
1 tsp of vanilla
Then stir in a cup of rolled oats
Beat together:
1 egg
1 cup of milk
1/4 cup of oil
4 Tablespoons of maple syrup

Preheat oven to 350 F degrees.
Add the wet ingredients into the dry. Stir until just combined; do not over-mix.
Add in the cut strawberries. Stir again gently, until just mixed in.
Bake in pre-heated oven, 20 to 25 minutes. Later, you can top it with a little strawberry sauce and cut berries.
Berry muffins not only make delicious fresh strawberry desserts, but also are favorite items for buffets and brunches.

Frozen Fresh Strawberry Ice Cream Pie

We topped this dessert with cooked dark cherry sauce for a little variety, but you could also use strawberries, or a medley of berries.

You will need:

  • 1 quart of natural ice cream or ice milk. Or try strawberry flavored Rice Dream.
  • I cup of chopped fresh strawberries
  • Several halved strawberries (for top) – or use a different kind of berry on top for contrast, or sauce as in the photo; even jam
  • ½ cup unsweetened chocolate chips (optional, but yummy)
  • Whipped cream topping (optional)

First, pre-bake a pie crust according to its instructions, and cool. You can also use a graham cracker or cookie crumb type crust. We stress using natural, low-sugar ingredients when at all possible. You can find all kinds of healthy options in the natural food section of your grocery store, or at a health food store.

Soften the ice cream until you can mix it, then stir it until it is smooth. Gently fold in the strawberries and chocolate chips. Stir until evenly mixed in. Put the mixture into the pie crust. Add the sliced strawberries in a decorative pattern on top. Cover well with plastic wrap, and freeze. To serve, top with whipped cream, if you’d like, and a whole strawberry on each piece. Or a piece of candy.

My dad made his own homemade ice cream until he was 93 (when he could no long see well enough). That’s how easy it is. We have some of his excellent, natural recipes here, including strawberry. Machines are inexpensive and worth it. Ice cream making is a great group activity as well.

Decorate your favorite cake by creating a flower pattern on the top, held in place with frosting or whipped cream. Start with a wide circle of petals on the bottom, and work your way up. You can make as many petal layers as you’d like, depending on how fancy you want to get. Also consider finishing it off with a dollop of whipped cream on top, and/or candies or sprinkles.

Use a baked apple as a base for this easy dessert. Surround it with fresh strawberries and a cookie such as a meringue or a macaroon. Top with whipped cream and drizzle on some strawberry sauce or even jam.
